Even though the major market has tricked us into believing what palate of food is "healthy" and what is not, we have forgotten that taste and flavor are the key elements of our food. We reconnect with our roots with what feels like home like our beloved "ghee" which is now trendy.

Cold brew might sound like a disconnect for those who haven't tried it. It’s just coffee, but made with a different technique. We can still grow around our roots while embracing modernity in the form of technology and innovation.

Talking about invention and innovation

Coffee has been around us for over 5000 years but the invention of cold brew dates back to the 1600s in Japan.

The Japanese developed exquisite equipment to brew coffee in public areas. They would brew cold coffee for hours, extracting every flavour from the bean which would become a big spectacle out of the mystique surrounding the cold brew procedure by letting each drop of water descend down a tower through the coffee grounds.

This was the antique way of amusing spectators around, now we are charmed by just 15 seconds.
